Yet another "by accident" recipe that has become one of my favorites! For a friend's party I made a dip which I saw on Food Network that sounds yummy and healthy. Fast forward a few days to a craving I was having for chicken salad and my desire to not use mayonnaise. I opened my fridge and there, staring up at me, was some leftover dip (which has the consistency of hummus); I figured it wouldn't hurt to try it as my healthy mayo. And guess what? YUM!!
I know it's Fall, not Spring but it's so nice to have a staple few items that can create tasty and creative dishes! Spring rolls certainly can look fancy (especially if you can roll them up better than I can!) and the filling options are endless!
Meat sauce with vegetables, hidden and revealed, on top of whole wheat pasta.
There are days when pasta is calling your name. And this day was it! Do you ever put ingredients together and just know it's going to taste good?
When I read this blog post, I wanted to try it! And being the impatient person that I am, I did! The next day! Without looking into the ingredients and my inventory... Guys. This is SO easy. We love salmon and I make it frequently so I like to change up how I prepare it (my typical recipe is with an apricot sauce which is to die for- future post for sure!). For this meal, I used the Whole Foods app. Let me just say, if you do not have this app, GET IT! I find more recipes on it than anywhere else and they are healthy and the app is free!! Can't go wrong. Anyway, back to the recipe - I searched salmon and found this on the app. Of course, I made it my own based on what I did and didn't have...
Aly and I grew up eating our mom's very colorful beet and potato Latvian salad! It was a favorite of one of my childhood friends who recently came for a short visit, so I decided it was time to make a batch. I chose regular beets and red skinned potatoes, although any variety of white potatoes would work just as well.
Fresh okra, garlic, onions, celery, corn, chicken, pork, sausage, tomatoes....
And use up random little bits of vegetables from your fridge! I love a filling, tasty, clean-out-kitchen meal! Bring on the Jambalaya! (And let me just tell you, I didn't realize I was spelling Jambalaya wrong...I thought it was jumbalaya. I actually pronounce it that way....) Look at that glorious color! What a vibrant spread to serve family and guests alike.
And it's nutrient dense, but light and tasty!!! Did I mention it's easy as well? Detailed recipe below! Now that my littlest has a good set of chompers, she is devouring solid food (mostly animal proteins) in vast quantities. I am not a huge meat lover, but there is a place for it. In an effort to stay within our budget, seasoning a whole chicken and roasting it, is simple, filling and delicious!
