Bring on the Jambalaya!
(And let me just tell you, I didn't realize I was spelling Jambalaya wrong...I thought it was jumbalaya.
I actually pronounce it that way....)
Whatever you have will work.
I like fresh corn, okra, and definitely some tomatoes (canned or fresh), the acidity helps take the slime out of the okra. I added celery too. I could have thrown in carrots but wanted to save mine for another dish.
Add some meat and let it simmer.
Mashed Avocado and Shredded Cheddar were are picks!

You can pair the dish with bread (to sop up all the good juices),
rice or any other cooked grain
I chose pasta.
And below is my husband's piled mountainous jambalaya!
Grab an assortment of vegetables:
corn, tomatoes, onions, garlic, celery, okra, carrots, green beans, etc.
Grab a good combination of meat:
Sausage, chicken, pork, shrimp, etc.
Making the Dish:
Chop vegetables into bite size pieces.
Prepare meat for cooking, typically in bite size pieces.
Saute onions and garlic in oil.
Add vegetables that take longer to cook.
Saute for a few minutes stirring.
Throw in meat and ensure enough liquid has been excreted (Now that's a gross word...) by foods.
Allow to simmer, with lid tilted, until meat is done.
Toss in vegetables that just need heating up (like corn)
throw in shrimp (as long as it's pre-cooked) at the last minute.
P.S. Add toppings like freshly shredded cheese, avocado, maybe a spritz of lime juice, broken corn chips, you name it for an extra treat!
