These are the veggies I used (I would have preferred a red onion but didn't have one, so I added red cabbage for its color and crunch).
You will want the corn to be cooked, at least slightly. I boiled it for a few minutes so it would still be a bit crisp but I think grilling it would add another level of flavor to this dish.
Everything else is raw, just chop everything up and mix together. I drizzled macadamia nut oil and white wine vinegar and tossed the salsa with some salt and pepper.
The fish is even simpler. Sprinkle with salt and pepper on each side, place in a heated pan with some olive oil, flipping once until each side is slightly browned and the salmon is cooked through completely.
I chopped some fresh sage to put on top of the salmon which I placed on a bed of the salsa. The rest of the meal included my mom's rice roni (another future post!), carrots with oregano, and Costco's kale cole slaw. Yuuummmm!
My hubby said this was a 4!
