In the summer when fresh produce is in abundance here in Cali sometimes it's hard to decide how to consume it. Here's your answer! Through it in a salad and make sure it's filling by adding protein, lots of variations of nutrients, whip up a tasty salad dressing, and grab some corn chips to go along!
I got the idea from the recipe at Garden Grazer. I had fresh corn from the farmers' market. I also had leftover black beans that I had cooked in the pressure cooker using my mother-in-law's tasty Cuban recipe a few days prior. I chopped green onions, cilantro and tomatoes to be added as toppings over the mixed lettuce greens.
Because I couldn't decide and had ingredients for both recipes. I made two different taco dressings. The first came with the original recipe. It highlights lime and cilantro, two of my favorite ingredients. Check it out here. The other dressing is an avocado base that came from Krista's Kitchen. The avocado dressing appealed to me because we have been inundated with tasty, fresh, cheap avocados.
Side note: For Krista's avocado dressing, I used greek yogurt because we don't ever carry mayonnaise. Sorry, but I have never been a fan of that stuff.
Unfortunately, I don't have a picture of the cilantro-lime dressing. Either way, we enjoyed both for their own merits. I would follow your tastebuds in choosing which is right for you! Are you a creamy avocado with a spicy kick? Or a smooth, clinatro and lime person?

I added our own twist by topping with cooked quinoa and some ground beef. We wanted a heartier salad and this fit the bill! We all grabbed a handful of corn chips and dug in!
