I'm going to be honest. The most exciting part of going to the gym is the chance to watch Food Network :-D It may seem counter-productive but we don't get the channel at home and it keeps me running longer, so no judgement! The last time I was there, I saw a segment by Melissa d'Arabian and got inspired to go home and make a salty snack for my honey! The original recipe is here, although when I made it I was going off of memory so my proportions weren't exact. Melissa made a great recommendation to use plain, cheap olives since there are so many flavors involved, there is no need to use a fancy variety (this time, I used some Greek olives in addition to regular black because I ran out of the latter...the first time I made it I used all black olives and thought it turned out better).
The great thing about this recipe is that it is SUPER easy because you get to use a food processor! Throw some olives, garlic, capers, olive oil, lemon zest and lemon juice into the processor and give it a few zips so that everything is chopped small but not so long that it is a puree.
The next part is optional. You can leave it as is and it will be delicious, or you can add some meat- sardines or tuna fish or be creative and add your favorite! I chose tuna fish (since, you guessed it- I had some on hand), and stirred it in with the olive mixture.
Grab a cracker and scoop some dip on it and into your mouth! Tangy, salty, sorta-fancy-feeling delicious! (The cracker in this picture is the undisputed favorite in our home- it's Costco's Ancient Grains from Kirkland Signature- SO much flavor with just the right amount of crisp and they're pretty decent for you too!). My Italian loving food judge gives this a 5!
