Hi there! Have you ever tried to make sourdough starter? Making the sourdough starter from scratch usually takes a week or so and that's hoping you catch the good bacteria first time around. My husband loves sourdough and I have become quite partial to it myself so every new place we go, I try to start up a new batch. I am still working on getting my starter to thrive before I start using it in recipes.
Anyways, I happened upon this salt-rising bread and learned that many people used this method way back in the old days. You only need to let the starter sit overnight and it's ready to be used as leavening and nutritional value the next day!

If I recall correctly, I had to use my muscles to knead the dough well. But what's not to love? Get a little workout before you consume some carbs. Knead some dough and you reap the rewards in a few hours with some fresh, delicious bread.
Do you notice anything unusual with the above picture? Yep! One loaf was massive and the other looks puny next to it. I do have two different size loaf pans so it's best not to compare too much. They started out in different size containers, they're bound to stay different sizes. Maybe I should invest in matching bread pans? I'm kinda picky with my kitchen, so I will wait until I find what I am exactly looking for.
(Or until one of my bread pans hit the dust...)

I can honestly say i was curious if it would work. And the salt-rising bread did work! I was careful to follow the instructions and to pay attention to the details. While it's not my family's favorite bread ever, I will definitely be making it again!
