Following this recipe, I grabbed my ingredients and went to work. The work is primarily preparing the vegetables. The oven & stove do the rest!
I found some beautiful purple potatoes and had greenbeans to throw in. Celery, mini portobello mushrooms, carrots and regular potatoes were added too. I also had a can of stewed tomatoes, onions, garlic and beef bullion and of course barley.
I typically make this in two pots. Here's a few catches.
1. It makes a lot (leftovers!)
2. The pots need to be oven proof.
3. It takes several hours to cook. (But that's why it's so good!)
4. The only thing I don't follow in the recipe is the last portion about adding a cornstarch slurry. I just let the broth be as it is, thin yet delicious!

My judge loves this recipe! It's simple yet powerful.
(I just may have to pull this out of the freezer for my lunch today! My stomach is growling remembering the tasty goodness!)
