Since Jodye and I have been wee little ones, our family has always served popcorn, fruit salad and sometimes cheese and nuts for Sunday night dinner. I can't remember a Sunday without it growing up! I even tried to implement it during my short college years (I married my sophmore year).
Thankfully hubby enjoys fruit (and use to concoct some awesome fruit smoothies with his best friend) so I didn't have to fuss about keeping this light fare tradition alive.

Fruit salad is fun to create because it can be very colorful and you just use whatever fruit is on hand. Yesterday I had grapes, peaches, strawberries, mikans (ok, Aly no Japanese here, the American word is clementines, right?) and fuji apples.
It turns out those strawberries were picked by my kids. It took about 30 minutes at the patch to explain to my kids that we only picked the red ones. Thankfully we had a good friend along who coached them in the laws of strawberry picking.

You see this beautiful bowl? It's a treasured memory and I think it's lovely. My husband bought it for me when we were on a getaway in the Smokey Mountains this spring.
I love the uniqueness of it! Even those it's charming, I use it to bake bread in and of course, for our fruit salad!
As we are anticipating many moves across the country (and hopefully across the world), our family has begun to pare down on non-necessities. So we gave away our popcorn popper. We found a great way to make the popcorn on the stove without the corn becoming heavy laden with oils and junk.
Grab some coconut oil and put a knob of it in a large pan (with lid). We use our stainless steel wok. And sprinkle in some popcorn kernels.
Every now and then shake it around to ensure it doesn't stick. And keep the lid on! Unless you want the kids and dog hopping around snatching shooting corn kernels all over the kitchen.
Wool-lah! Sprinkle lightly with sea salt and be enjoy the crispness!
If you like a cheesy flavor, add some nutritional yeast. It'll up for B-vitamins and the taste is great! I got hooked on it during pregnancy and still love it!

Eat the fruit salad topped with yogurt, almonds, sunflower seeds and granola if you like! Cheddar cheese slices are a good complement to the popcorn and fruit. I hope you enjoy this tasty treat as much as we did last night!
