First off, I didn't have almond milk so I put in regular milk.
It was quite easy to whip up and I loved how I only got the blender compartment dirty. Pouring the batter into the hot griddle went smoothly despite (Excuse me! With gratitude to my...) four little helpers!
For those who like the flavor of banana without extra sweetener, this is a great recipe!
I also liked the oats addition, one of my favorite ingredients.

And for those of you who are curious, I put a bit of coconut oil on the hot griddle instead of butter.
It was really delicious! I loved serving freshly made strawberry maple syrup! Yum.
In lieu of the canola oil, I just plopped in some coconut oil!
(Can you tell by the way I use the coconut oil, we have a HUGE jar from Costco???)
Everything else I followed according to the instructions, though next time around I may try honey instead of sugar.
Another alternate that I will certainly be doing is mixing it in the Vita-Mix! We found the cottage cheese clumps in our pancakes to have an undesirable look. (I know, picky, picky!)
I liked the flavor of this recipe better than the previous one. (Like I said earlier, I'm not a huge lover of bananas.) These pancakes were protein-packed but very neutral in flavors and even light, so it goes with a lot!
I will definitely be making these again!
