The following recipe is my new favorite. I just made it last week and already want to prepare it again! Real Simple never fails. Here is the recipe, enough pleasantries, let's get started!
Also, this is super easy. A one pan wonder. And did I mention delicious? Anyway, you want to evenly coat the chicken with the olive oil, garlic, salt and pepper, lemon zest and rosemary (fresh is best), with the cut up lemon quarters wedges between pieces. Roast according to the recipe (35-40 mins at 450).
Take out the chicken and lemon and add in the kale and bread (the recipe calls for baby kale but I used regular and it worked just as well), toss and roast.
The final result is a crisp crust on the chicken, wilted greens with croutons flavored with the pan drippings. Are you drooling yet?! I served it with plain old tomatoe slices which added color and a refreshing cool alternative to the rich and hot main dish.
