I adapted this from Jeanette's Healthy Living.
I was hoping to have time to let the sauce cook down in the crockpot...but.... God's plans changed that.
And it was totally fine with me because I got to cuddle with my littlest.

The gist is let the veggies and meat saute for awhile and then add the tomato sauce.
I threw in the above to make it saucy.
Stewed tomatoes, crushed tomatoes and Italian seasoning.
...I know, I am SO original.

Here's what I gathered:
Olive oil
1 pound of ground beef
A handful of mushrooms, thickly sliced
1 zucchini, shredded
2 large carrots, shredded
1 onion, chopped
1 small head of garlic, roughly minced
2 small fresh tomatoes, chopped
1 can of stewed tomatoes
1 can of crushed tomatoes
a sprinkling of Italian seasoning
Saute onions in olive oil until aromatic. Add mushrooms, ground beef and garlic.
Once cooked, add zucchini & carrots. After it's cooked for a few minutes,
add the result of the saucy ingredients. Let simmer for a long time.
(Ours simmered for about 2-3 hours)
Serve over pasta.
Add freshly grated parmesan cheese if desired.

My handsome judge rated it a 4**** suggesting I add another head of garlic in it.
My kids ate seconds so I was happy!
So if those you are cooking for like more spice, add more garlic!

The hubs likes to eat chunks of it.
And honestly my fingers thank him so I don't niche myself up trying to grate it all.
