I know it's Fall, not Spring but it's so nice to have a staple few items that can create tasty and creative dishes! Spring rolls certainly can look fancy (especially if you can roll them up better than I can!) and the filling options are endless!
Forgive the lacking of beautiful pictures. I was in a hurry and well had some extra "help".
In the pantry I had rice paper and
Thai peanut dipping sauce.
From my fridge I grabbed fresh ginger,
lettuce,
carrots,
green onions,
cilantro
and shrimp!

I placed the rice paper in water making sure it was completely wet on both sides.
Plop shrimp on top and roll.
Along with the peanut dipping sauce, it was a light, tasty fare!
I can't give any tips for how to wrap it up nicely, so if you have any, let me hear them!
