Do you remember the converse shoe High-Tops? Maybe they are in style again. I'm not really sure because I am not really fashion-forward. While I was thinking of this blog post title, high tops came into mind.

I picked up these delightful, colorful carrots and their counterpart green tops (high tops) at the farmers' market. Aren't they gorgeous?! I mean how can you pass up on good looking vegetables like that! I had to peruse the world wide web for a good recipe that incorporates the leafy greens. And I found one that we all enjoyed! And can I just say, sometimes it's hard to find a classic, easy, simple dish that tastes good and has good ingredients. But here you go, there is one!
I love the unique look to each carrot.
While this recipe didn't recommend the colorful carrots, it worked out just fine!

I followed the recipe quite closely but accidentally forgot to toast the walnuts first. I think that would have added a nice little flavor enhancement.
It was easy to cook the carrots, onions and garlic in the chicken broth and then add it to my Vita-Mix.

Unfortunately I don't have a picture of the completed pesto. The pesto is just like a regular basil pesto except the ingredient for basil is substituted with the green high tops, I mean... carrot tops.
Because it's raw garlic, it does have a kick and I did add several cloves.
But it was super yummy!
I liked how you just add a dollop of pesto to the carrot soup!
I can imagine you could add instead a dollop of yogurt if you didn't have the carrot leafy greens.

She loved it!
