You know those days when you want a light, tasty and fresh meal without too much work?
Well this is a dish that works for that type of day! The history of my little section of California has to do with Japanese fishermen. So in honor of Japan, I bought some soba noodles at the local Asian market and whipped up this dish. Check out the full recipe here!

I also didn't have cabbage, but did add heirloom tomatoes (thanks Farmer's market!) I thought I had red pepper but couldn't find it. I had also recently ran out of ground (& fresh) ginger, so I sprinkled some ground coriander which tasted great!
Notice my little man's hand sneaking into the bowl? I could barely find an opportunity to take the picture, he kept diving in for more!
The expert judge calls it a 4 star!!! ****
