I acquired some wonderful, huge, inexpensive organic sweet potatoes awhile back. I had been eyeing this recipe on Pinterest and decided to give it whirl. I also had been curious about this Cheez-Its recipe so I figured I would do a Pin Together meal! As you may know from reading another post of mine, I don't like buying ingredients I'll likely never use again...because well let's call it "The Inevitable Move". And my dislike for sodas motivated me to look for another pulled pork recipe and thanks again to Pinterest, I found one!
I was a little concerned to try the Cheez-It recipe because I am (too impatient) not very good at rolling dough out into a thin strip. But it was easy!
And seeing as it's crumbly, it can make it hard. Check out the authentic, cheddar cheese in the dough?

I wanted some tang with my sweet. So I grabbed some farmers' market green onions and a nice yellow lemon as extra toppers. I am a savory food kind of person. I also love toppings. My pizzas are loaded with toppings. My cereal bowl always has several types of cereal. And of course my ice cream has to have salty peanut butter on the side.
So there we are! Sweet Potato stuffed to the brim with crockpot pulled pork, homemade bbq sauce, sprinkled with green onions, natural cheez-its and spritzed with lemon.
I added fresh corn on the cob (thanks Farmers' market!) and steamed peas for the sides.
The verdict: We liked all of the foods individually and the sweet from the potato complemented the pulled pork. The toppings were a fun twist. The cheez-its are great fresh but they aren't very crunchy, more fluffy. Maybe if I had baked them longer, they would have been closer to the original brand.
This meal was super filling and had a lot of nutrition. A win in my book!
