Good morning! In this first Pin Together (whoop, whoop!) post, I (Aly) will start with the most important meal of the day! Most Saturdays, we like to cook up a large breakfast. It's been a tradition the kids love and even the hubs and I look forward to! Sometimes it's waffles, or farmers' market vegetable frittata, or french toast or a southern breakfast of homemade jam, freshly baked biscuits, eggs, breakfast meat and fruit salad. But last Saturday, the kids were thinking sweet, I was thinking protein, so we compromised!

Probably due to my own fast-moving, oblivious self, I didn't mix the batter thoroughly so a chunk of banana was still intact at the bottom. I cooked it on the griddle and had my handsome judge taste it. He loved it! So there's a new recipe idea for any southerners out there. Instead of country fried steak, or fried oreoes or fried snickers, try fried bananas in a pancake batter!

Although my southern roots spring out sometimes, I do enjoy the fresh side of California. Gathering fresh strawberries purchased from the farmers' market combined with some pure maple syrup and following the guidance of another Pinterest recipe, I made fresh strawberry maple syrup! I was not about to waste the chopped and subsequently simmered strawberries so I plopped them on top of my pancakes! Here's a little secret about me, I don't like eating pancakes with only sweet stuff. So you'll find my plate with some peanut or almond butter smeared on the side. (Notice the leftover remnants in the picture below.)
I have a constant desire to compare one recipe against another. So I found this Whole Foods recipe that also had cottage cheese in it and decided to try it out: http://www.wholefoodsmarket.com/recipe/fluffy-cottage-cheese-pancakes

Another alternate that I will certainly be doing is mixing it in the Vita-Mix! We found the cottage cheese clumps in our pancakes to have an undesirable look. (I know, picky, picky!)
